我們家老爺的美國胃,早餐習慣吃蛋類的東西,所以今天就做了一個蛋餅捲當早餐,這個蛋餅捲的好處就是如果冰箱裡有一點一點的剩菜,可以切了丟進去,像是香菇,青椒,起司,泡菜,洋蔥,雞肉,紅燒肉,巴西里屑,香菜,甚至馬玲薯都是很好的內餡料喔!!
份量: 3-4 捲
A材料
蛋 6 顆
牛奶 1 大匙
鹽 ½ 小匙
黑胡椒 ¼ 小匙
B餡料
黃色甜椒,切小 丁 半顆
蕃茄,切小丁 半顆
香腸,切小丁 ½ 杯
C裝飾料
奶油果,切小丁 ½ 杯
培根條 3-4 根
作法
1. 將A材料在一個大碗中打勻。
2. 起一油鍋炒熟B餡料。
3. 用一個小型不沾鍋,加熱一些油,倒入足夠的蛋汁,如果很厚,就用筷子將外圍已熟的蛋皮撥向中間,均勻散步蛋汁,將炒熟的餡料放到一半的半熟蛋皮上,蓋上蓋子悶個一分鐘。
4. 起鍋時,要慢慢的將蛋皮搖到邊緣,先倒有餡料的那一半到盤子上,再將另一半蓋到上面,蛋捲蓋成半圓型。再用奶油果和培根裝飾。

European Omelet
A Ingredients
Eggs 6 pieces
Milk 1 tablespoon
Salt ½ teaspoon
Black pepper ¼ teaspoon
B Ingredients
Yellow pepper, chopped ½ cup
Tomato, chopped ½ cup
Sausage, chopped ½ cup
C Ingredients
Avocado, chopped ½ cup
Bacon strip 3-4 pieces
Directions:
1. Beat A ingredients in a mixing bowl till blended.
2. Cook B ingredients in a small frying pan for about 3 minutes.
3. Heat up some oil in a small non-stick frying pan, pour some egg mixture on it, using a non-stick spatula, stir the cooked egg on the outside of the pan to the center, then place the cooked B ingredients on half of the egg, place the lid on for a minute till eggs are cooked through, but not scorched.
4. Using a spatula, loosen the edge of the omelet, then pick up the pan and shake the omelet onto the side of the pan, fold the omelet onto a plate, serve with avocado and bacon strips on top.
Serving: 3-4
