這道紫米炒飯是我臨時做出來的,姑姑和堂弟Leo要來家裡提前過感恩節,中午餐就先吃一點炒飯吧,加了枸杞子的炒飯味道不輸加了葡萄乾的喔,營養價值又高,大家一定要試試!!
份量: 4 人份
材料
油 ¼ 杯
蛋 2 顆
蒜末 2 大匙
枸杞子,泡軟,瀝乾 ½ 杯
昆布,泡軟,切小塊 ½ 杯
紫米飯,煮熟 3 杯
花椒油 1 大匙
鹽與白胡椒粉 適量
蔥花 ½ 杯
作法
1. 起油鍋加熱油,打蛋下去炒熟,蛋半熟時放蒜末一起炒香,再放枸杞子和昆布下去炒,熱了後就可以放紫米飯下去一起炒,這時可以加鹽與白胡椒粉和花椒油下去一起炒勻,起鍋前蓋上蓋子一分鐘,關火後趁熱放蔥花下去,趁熱吃。

Gojiberry Fried Rice
Ingredients
Oil ¼ cup
Eggs 2 pieces
Garlic
Gojiberry, soaked, drained ½ cup
Kumbu, soaked, chopped ½ cup
Steamed red rice 3 cups
Red chili oil 1 tablespoon
Salt and white pepper to taste
Scallion, chopped ½ cup
Directions:
1. Heat oil in wok, cock the eggs to scramble, when the eggs are set, put in the minced garlic, cook till fragrant, then put the Gojiberry and Kumbu into the wok, stir to heat up, then put in the steamed red rice, stir to blend, put in the salt, white pepper and hot chili oil, stir to blend, then place the lid on for a minute before turning off heat, fold in the chopped scallions while it’s still hot, serve hot.
