鮮蝦檸檬漬  

我家老爺要減肥,公司有一個減肥比賽,他沒有贏過,但是每次可以有點動機吃的健康多運動,這樣就值得了。我最近都設計一些健康低卡的美食,要減一起減吧! 這道檸檬漬我其實哈很久了,天氣冷很懶的動手,但是我做完了才發覺這道菜簡單美味又容易做,以後大概會常做吧!! 這道美食我家老爺是從臉書上先看到照片的,打了簡訊跟我說等不及要回家吃晚餐了,下班後也馬上衝回家!! 有他這句話,切到手痠都值得了!! (^_−)−

 

份量: 4 人份

 

材料

鮮蝦,去殼與泥腸           400

聖納羅辣椒                           1

黃瓜,切小丁                       1

紫洋蔥,切小丁                   1

蕃茄,切小丁                       1

 

B材料

現榨檸檬汁                          3 顆檸檬

香菜屑                                 2 大匙

                                         ½ 小匙

                                          1 大匙

 

作法

1. 燒一鍋滾水穿燙鮮蝦,約2-3 分鐘,不要煮太久,肉質會變老,撈出後過冷水降溫,再將每隻蝦切三段,放涼備用。

2. 將聖納羅辣椒橫切兩段,用小茶匙將裡面的芯和籽挖出來,再用刀切成細末,放入一大碗中,再將黃瓜丁,紫洋蔥丁,蕃茄丁,和鮮蝦塊一起拌入大碗中。

3. B材料擠量入同一個大碗中,拌勻,醃個一個小時候再食用,風味更佳!!

4. 通常我都是配上Tostada和美乃滋一起吃,要吃低卡低油的就這樣吃吧!!

Shrimp Ceviche

 

This dish is super simple to make yet delicious.  I made it with langostito the following week and it was just as good.  It’s a perfect recipe for a weekday dinner or an appetizer for a party!!! Enjoy!

 

A Ingredients

Shrimp, deveined/shelled            400 g

Serrano chili                                     1 piece

Cucumber, chopped                         1 piece

Red onion, chopped                         1 head

Tomato, chopped                             1 head

 

B Ingredients

Fresh lemon juice                   3 heads

Sugar                                       ½ teaspoon

Salt                                          1 tablespoon

 

Directions:

1. Blanch the shrimp in a pot of boiling water, around 2-3 minutes, do not over cook.  Drain and rinse with cold water to cool.  Cut each shrimp into 3 pieces. 

2. Slice the Serrano chili in half, scoop out the membrane and seeds, then mince.  Place the mined Serrano and the shrimp pieces in a medium mixing bowl, along with chopped cucumber, red onion, and tomato. 

3. Measure all B Ingredients into the bowl, toss, let marinade in frig 1 hour to deepen the flavor.

4. Serve with tostada chips and mayonnaise if desired!!
