最近加入愛麵一族,以前是不太愛吃麵的,事實上,我不吃的東西還真少~

這個麵的味道很夠,吃起來有麻醬的香濃,麵條夾出來時有花生粉的小小顆粒感,偶爾會咬到一粒腰果,嚼起來真香,連我家老爺都整碗連湯帶料的吃完了(或者是餓到了晚上8點半才吃晚餐,饑不擇食了)

 

份量: 2 人份

 

A材料

麵條               2 人份

波菜               2

 

B肉料

橄欖油                 1 大匙

絞肉                  240

甜麵醬                  1 大匙

醬油                      1 大匙

                         ½ 小匙

 

C醬料

醬油                   1 大匙

麻醬                   2 小匙

味噌                   1 小匙

                       1 小匙

辣油                   1 大匙

 

D湯料

花生粉                 2 大匙

腰果粒                 2 大匙

蔥花                    ¼

無鹽高湯             2

 

作法

 

1. 麵條煮QQ的,煮完後用同一鍋水燙熟菠菜。

 

2. 起油鍋加熱少許油,放入絞肉炒香,如果此時油太多,可以用撕一張廚房用紙下鍋吸收一些油脂,之後加入甜麵醬與醬油,炒拌勻後,淋入酒,酒蒸發後起鍋。

 

3. C料在小碗中拌勻。

 

4. 在麵碗中放入煮熟的麵,鋪上炒好的絞肉,波菜,撒上花生粉,腰果粒,蔥花,再各加入C醬和一碗熱騰騰的高湯即成。

Dandan Spicy Noodle Soup

 

A Ingredients

Noodle, thin             2 servings

Spinach                    2 cups

 

B Ingredients

Olive oil                            1 tablespoon

Ground pork                  240 g

Sweet soybean paste         1 tablespoon

Soy sauce                          1 tablespoon

Cooking wine                  ½ teaspoon

 

C Ingredients 

Soy sauce                    1 tablespoon 

Sesame paste               2 teaspoon 

Miso paste                   1 teaspoon 

Rice vinegar                1 teaspoon    

Chili oil                       1 tablespoon

 

D Ingredients

Peanut powder              2 tablespoon

Cashew pieces              2 tablespoon

Scallion, minced          ¼ cup

Stock, low sodium        2 cups

 

Directions:

 

1. Cook the noodle to al dente, blanch the spinach

 

2. Heat the olive oil in a frying pan, add the pork, cook until fragrant, to wipe excess oil in pan, add one piece of paper towel to pan.  The paper towel will absorb oil, discard after.  Add the sweet soybean paste and soy sauce, stir to blend, then add the cooking wine, cook until wine completely evaporated.

 

3. Blend all C ingredients in a small bowl.

 

4. In a soup bowl, place the cooked noodle in the middle, then add the cooked ground meat, blanched spinach, sprinkle the peanut powder, cashew pieces, minced scallion on top, spoon C sauce into the middle, add boiling stock to bowl.  Serve hot.
