這個不是印度的馬沙拉,是用意大利甜酒瑪莎拉做的,我剛開始也搞不清楚,為什麼兩個都叫馬沙拉,這個蘑菇是去農夫市場秤新鮮的,蘑菇味十足。這天晚上回家從健身俱樂部已經九點了,我不太餓,可是我家老爺沒吃晚餐,我就跟他說我本來打算要做什麼瑪沙拉的意大利式晚餐,他也沒問,就說任何東西有加瑪莎拉都好吃,這是真的,這種瑪沙拉酒有兩種,一種是甜的,一種是乾的,乾的瑪莎拉酒酒味較濃,自己再加糖也是可以的,這種酒價不高,用來煮菜最好了。

 

份量: 2 人份

 

A材料

意式玉米糕          1

橄欖油                  2 大匙

 

B材料

奶油                                  1 大匙

橄欖油                              1 大匙

洋蔥,切絲                      半顆

蒜塊                                   1 大匙

蘑菇,咖啡色,切片       2

甜瑪莎拉酒                       ½

液態奶油                           1 大匙

巴西里屑                            1 大匙

 

作法

 

1. 拿一不沾煎鍋加熱A材料的橄欖油,將玉米糕切厚片下鍋兩面煎至金黃。

2. 另拿一炒鍋加熱B材料的奶油和橄欖油,加入洋蔥絲炒至透明,加蒜塊和蘑菇片下去炒一兩分鐘後,加瑪莎拉酒,酒蒸發一半後就可以加液態奶油和巴西里屑。

3. 將煎至金黃的玉米糕厚片放到盤中,一盤三片,再把蘑菇料和湯汁堆到玉米厚片上,點綴一小片巴西里葉片。

Mushroom Marsala

 

A Ingredients

Polenta                     1 stick

Olive oil                   2 tablespoon

 

B Ingredients

Butter                                       1 tablespoon

Olive oil                                    1 tablespoon

Onion, sliced                               half head

Garlic, chopped                        1 tablespoon

Crimini Mushroom, sliced       2 cups

Sweet Marsala wine                 ½ cup

Heavy whipping cream              1 tablespoon

Parsley, minced                         1 tablespoon    

 

Directions:

             

1. Heat up the A ingredient olive oil in a non-stick frying pan, cut the polenta into thick slices, add the polenta slices to frying pan, fry until golden brown on both side. 

2. Heat up the B ingredients butter and olive oil in another wok, add the onion slices, cook till translucent, add the garlic and mushroom, cook for a couple of minutes, add the Marsala wine, keep cooking until the sauce thicken a bit, then add the heavy whipping cream and minced parsley.

3. To serve, place three polenta slices on each plate, pile the mushroom onion on top, drizzle with the mushroom sauce, garnish with a leaf of parsley.
